RECIPIE // BREAD AND BUTTER PUDDING

So, we have had sunshine and we have rain, oh so much rain, this summer – so I have chosen for you a recipe for a perfect treat whether it’s a warm and glorious day in your garden, or a movie night where you are tucked up inside listening to the rain pattering down your window frames.

This is a traditionally English recipe but I have added my own ‘South of France’ twist to this. I hope you like it.

Ingredients:

8 slices of bread

3 egg yolks

200 ml of cream

35 ml milk

90 g butter

4 tbsp. brown sugar

4 tbsp of dulce de leche (here is a link on how to make if you do not have this in your local market)

1/2 vanilla bean pod

Method:

  • Preheat the oven to gas mark 6 (180 °).
  • Butter a baking dish, and spread both sides of the bread with butter.
  • Place the bread into the oven dish, on one or two layers depending on the size of the dish.
  • In a bowl, drop in the seeds contained in the vanilla bean pod, add sugar and egg yolks.
  • Beat in gradually incorporating the milk and cream, and  2 tbsp dulce de leche.
  • Pour this mixture over the bread slices and bake for 30-35 minutes, until the top is golden.
  • Remove the dish from the oven, top the bread slices with the rest of the dulce de leche (and maybe also Nuttella if you are feeling very naughty!) and serve warm.
